"Cooking is my passion", explains Michael Frank, kitchen chef and manager of the EssART bistro on the Creative Campus in Monheim. "Even in my early days, I set my heart on doing alternative civilian service since I was clearly unsuited to cooking in the German armed forces", he jokes. In August 2013, the 38-year-old chef took over the helm from Stefan Hoss. After completing his training in the Dresdner Bank canteen in Düsseldorf, he served a sever-year stint as sous-chef at the Seidler Parkhotel in Solingen. This was followed by jobs as the kitchen head at the Supé Conference Center in Haan, for the automobile parts maker Brose in Wuppertal, and for the biotech company Quiagen in Hilden. He has now been working as the EssART bistro's manager since 2012. In addition to his everyday kitchen duties, he is responsible for the meal plan, purchasing, costing, office work, and the entire monthly financial reporting. "I give topmost priority to freshness and good service", underlines Michael Frank. "What is more - like every other company - we have to keep an eye on budget planning."
Michael Frank has a busy schedule. His day kicks off at 6:30 a.m. with a meeting to discuss the run of the day with his 15 employees, followed by the allocation of daily portions, setting up the bar area, taking orders for the next day, and talking to suppliers. Apart from teamworking with his colleagues, he also enjoys his job because he can keep in contact with customers: "We are always open to suggestions and personal wishes. We're also happy so many customers took part in our survey. That's the only way we can keep improving our offering."
